Snack Time Molasses Cookie from my cousin Bessie



At our family reunion my cousin Bessie brought these old fashion molasses cookies and they were great. EXCEPT it shot my sugar sky high, so here is a modified version of her cookie.

I have never said anything before but I do some things that are not the way everyone else does them, like, putting all the dry ingredients together and sifting them. Why, just because I do not and it works.


1/2 cup Crisco, butter flavored
3/4 cup of Splenda
Blend together

1/4 cup of molasses
1 egg

Blend together

1 1/2 cup AP flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt

1 tablespoon of half and half fat free

Blend

add 1/2 cup of walnuts

Blend

Use a number 40 ice cream scoop

I use parchment paper and after I scoop the cookies I put another piece of parchment on the top and put another cookie sheet on the top and flatten them out.

Cook at 350 for 10 in a convection oven

or Cook at 375 for 10 minutes in a regular oven

These cookies are light, tasty and do not raise my blood sugar level.
