Blend 2 eggs with 1 cup of sugar and 1 cup of Splenda
Add 1/2 Cup Oil
Blend
Add 1 teaspoon of each of the following
Cinnamon
Nutmeg
Ginger
All Spice
Blend until smooth
Add 2 teaspoons of Baking Powder
Add 1 teaspoon of Baking Soda
Add 1/2 teaspoon of Sea Salt
Blend until smooth
Add 1 Cup of Pumpkin Pie filling
Add 1 can of good apple pie filling, chopped. I took a pie plate and a biscuit cutter and chopped the apples to about 1/4 inch pieces.
Blend until smooth
Add 1/2 Cup of Walnut pieces
Add 2 1/2 Cups Flour, stir in but just until mixed.
Next fill your muffin tins so the mixture is about one half inch above the edge.
Bake at 350 degrees for 30 minutes. Use a tooth pick to check to see if they are done.
I use a convection oven so the time might be different.
