Jordan Marsh Blueberry Muffins



Blend one cup of butter with 2 cups of sugar
The most important key to good muffins is in this first
step. You mix the butter and sugar until it is fluffy.

Then add two eggs, one at a time.. After you add the first egg, beat until it is really light, then add the second egg and beat until it is very light and fluffy.

Next add four teaspoons of a good baking powder and one teaspoon of salt. Once again beat until fluffy.

Now pour your mixture in a bowl and add two tablespoons of vanilla. (The best vanilla is the one you make yourself.) The vanilla needs to be folded in very gently.

Next add one cup of half and half. Stir very gently.

Then add 4 cups of flour. The more you stir the tougher your muffin will be. So if you want light muffins only stir until the flour is wet.

Now add five cups of blueberries. Frozen works best.

Next fill your muffin tins so the mixture is about one half inch above the edge.

Bake at 350 degrees for 30 minutes.
