Chimichanga



I use meatloaf mixed meat. This is beef, pork and veal
1-2 pounds of meat mix
1 medium Onion chopped
3 cloves of garlic
salt and pepper to your taste
1/4 cup of chopped fresh cilantro

Fry these items in a large frying pan until browned.

add 2 tablespoons of vinegar
1/4 cup of Worcestershire Sauce
1/2 cup of enchilada sauce
2 teaspoons of oregano
1 Table spoon of chili powered
2 cups of beef stock

Simmer uncovered for about two hours on very low heat.



Now we put them together. I used a 12 inch tortilla shell. You put the mixture in the center of the shell, just the right amount, then fold in the corners and make what would look like a pillow. Now use tooth picks to hold them to gather.

We deep fried ours for about 3 minutes..

Place on a cookie sheet and cover with your favorite cheese and put in the oven just long enough for the cheese to melt.

Serve with sour cream, guacamole, chili sauce, enchilada sauce, green onions, black olives and what ever you have that sounds good.

I am sure this is not the correct way but they are out of this world. My first real Mexican dish and it is now one of our favorites.

This would be a great dish to make for a crowd of hungry people or campers.
